Chicken Soup

Ingredients:

Chicken Breasts
Carrots
Celery
Onion
2-4 TB butter
Chicken Stock (I’m using homemade broth)
Salt
Pepper
Thyme
Italian parsley

Cook chicken in crock pot on low for 6-8 hours until fully cooked.

Wash and chop up veggies.

Add butter and chopped veggies to a pot, and cook over medium-high heat until soft.

Add salt, pepper, fresh thyme and parsley to taste.

Add in the broth (I use homemade bone broth, but any chicken broth will work).

Bring to a boil and simmer for 10-15 minutes.

Shred the chicken and add it to the soup.

Note: I’m known for measuring with my heart, so I don’t have specific measurements! This recipe is very forgiving and allows you to add or remove items as needed. If you have an abundance of meat and veggies, add more broth the next day. You can also reduce the broth significantly, add a little flour and make it a pot pie filling. Sometimes we’ll cook noodles separately and add it to the mix.
