Macaroni & Cheese

Put down that little blue box and follow this simple recipe for a delicious, homemade version of Mac & Cheese!

Ingredients:

1 package macaroni noodles

3- 4 TB butter

Approx 1/4 cup flour

16 oz heavy cream

Splash of milk

8-16 oz cheese, shredded

Salt, pepper, paprika (or seasoning of choice)

Directions:

Preheat oven to 375°.

Boil water and prepare noodles.

In a medium saucepan, begin by making a basic roux. Add butter to the pan and melt over medium heat. Add in the flour and whisk until combined. (The butter/flour mixture will look like play-doh).

Turn down the heat to low. Slowly add in a little heavy cream at a time, whisking the whole time. Continue slowly adding in the rest of heavy cream while whisking. Once combined, turn the heat up and stir constantly. When the sauce thickens, add in seasonings. If you need to thin the sauce out, add a splash of milk until you reach the desired consistency.

Set some of the shredded cheese aside for the topping. Slowly add in the rest of the shredded cheese to the sauce mixture, one handful at a time. Stir constantly. Once the cheese is fully melted, turn off the heat.

Drain the noodles and add them to a large buttered pan. Pour the cheese sauce mixture over the noodles and stir until combined. Bake in the oven at 375° for 20 minutes. Remove from the oven and sprinkle the rest of the shredded cheese over the top. Put it back in the oven and broil for a couple of minutes until it is gooey and bubbly. (Watch carefully so it doesn’t burn!)

Allow to cool for a few minutes before serving!

Feel free to make your own variation of this recipe! I make up these recipes as I go, so I never make them the same way twice! Add different cheese types, seasonings or a few splashes of hot sauce.
